VEG | Vegan Enthusiast Group

Objective

All are welcome to join VEG from lifelong vegans to the ‘vegan-curious’. VEG is founded on the idea that universities have a duty to translate the research they produce that supports transitioning to a plant-based food system that is necessary to maximize health and longevity, and address the climate emergency.

Those interested can contact Convener Elizabeth Dean, elizabeth.dean@ubc.ca for details on how to be added to the VEG list for updated information.

Members

VEG is an inclusive group of the spectrum of individuals from ‘the plant-based curious’ to the ‘strictly vegan’. In addition to Emeritus College members and their families, others in the UBC community and community-at-large are welcome to join this listserv group to receive a range of resources including vegan-friendly businesses, services, recipes, books, articles, documentaries, and movies, and engage in discussions on vegan initiatives. VEG hopes to provide resources on test-kitchen skills. Potlucks and opportunities to connect with each other are possibilities. VEG is here to serve the interests of all motivations for joining VEG (e.g., personal health, national health, environmental/climate and planetary health, and animal health and welfare and wellbeing, or simply curiousity.

Recipes

Orange Bran Flax Muffins

Suggested VEG modifications:

  • We use date paste instead of ‘sugar’ in all our recipes. Even though it has calories, it has much food value. I also add 1/4C dried sour cherries. Every oven is different, but ours seems to require a few more minutes to cook completely with a knife coming out clean (more or less, we like our muffins moist).
  • For the date paste, we buy a big container of organic dates. Remove the stem piece at the top and the pit. Add water to hydrate; an hour usually does it. Drain and re-add ‘some’ water, enough to make a paste and not runny. Blend in a mixer like a Bullet until a paste. I usually always have some on hand. For most recipes I replace the amount of sugar with the equivalent amount of date paste. Seems to work without having to adjust the fluid content.
  • We use plant-based milk.
  • We use ‘JUST Egg’, an excellent mung bean-based egg replacer. I am exploring ways to make our own. Will keep you posted.
